Made from malted barley, this distillery's name is a secret, but if you know much about the Canadian distilleries of the day, you can work it out. It spent 3.5 years in a moscatel barrique and then spent one year in a twice-used Canadian barrel.
The mouthfeel has texture and is slightly effervescent (evaporative) in the finish. The nose is enticing with peaches, cantaloupe, kiwi, honeysuckle and jasmine tea, which are all delivered on the palate including honey, apples, green grapes and surprisingly ginger ale. The finish has that surprising but gentle effervescent ginger ale quality with apples and honey.
