Cask #1 Rye Whisky Launch & Open House




We started Last Straw to make this. We’ve done a whole lot of making – 50+ casks down and aging. We’ve done a whole lot of waiting – our first single malts are well past 3 years now, but not yet ready.

Cask #1 Rye Whisky goes on sale July 3 at 10:00 am at the distillery bottle shop only. It’s on a first-come, first-serve basis, and quantities are limited. A healthy amount of the bottles have been pre-sold to some of you lovely people, which means that there ain’t that many available.

This whisky is made from 100% Ontario Rye, which we’ve sourced from family owned and operated mills, who in turn source from small family farms across Central Ontario. It’s made in the American style, meaning we let the big, bold, and spicy characteristics of the rye grain shine through. It was aged for exactly 3 years in a #3 char American oak cask. After tastings and consultation with several of the top spirits writers in the country, we settled on a 43% abv for bottling, which we feel showcases the concentration of flavours, and keeps much of the spicy bite of the rye without overwhelming.


Expect a full-bodied whisky, with a spicy, floral nose, and a well-rounded palate of candy & dried fruit sweetness, baking spices, earthiness, and a peppery bite.


$75 / 43% abv / 750 ml
