Cocktail Recipe: Irish Ginger

For everyone who loves a good whisky cocktail, which by now we just assume that everyone we know does, this one’s a keeper. Thanks to our friend Michael Smith for playing around with our limited-release Stout Spirit to come up with this one. This batch of Stout Spirit is a limited release of 420 bottles, made in collaboration with Lake Wilcox Brewing Co. in Vaughan. It’s the distilled essence of their Irish Stout, aged for four months in a re-charred Niagara wine cask from DRM.reCoop.

Made as per the recipe below, it’s a remarkably easy-drinking cocktail worthy of a warm spring day (if we ever get one this year… brrrr….). For those who prefer spirit-forward, simply reduce the amount of ginger beer to taste, and it’ll keep you warm on a cold spring night.
